Passover commemorates the Jewish exodus from Egypt after 400 years of slavery. Eating Matza is the most known observance of the holiday – the unleavened bread, similar to what the Jews ate after rushing to leave Egypt and not having time for their bread to rise. Chametz is forbidden on Passover which includes anything made from the the five major grains – wheat, rye, barley, oats, and spelt – that can still rise. Some traditions also avoid Kitniyot – rice, corn, peanuts, and legumes.
